SOUTHWEST CHICKEN FINGERS

Ingredients

1 cup plain panko breadcrumbs
1 Tbsp. Southwest Mesquite Rub & Seasoning
2 large eggs
3 boneless skinless chicken breasts, cut into strips, season with salt and pepper
½ cup prepared Dilly-Licious Dill Pickle Dip Mix

Instructions

Preheat oven to 375°F. In shallow dish, combine breadcrumbs and Southwest Mesquite Rub & Seasoning. In another shallow dish, beat eggs. Dip chicken strips in eggs and dredge in breadcrumbs, pressing into chicken. Place on a foil-lined baking sheet. Bake until internal temperature reaches 165°F on an instant-read food thermometer, about 25-30 minutes. Serve with prepared Dilly-Licious Dill Pickle Dip Mix.
